I have just finished writing out my own recipe for the local paper 'The Wishaw Hub' and 'The Hub' - they have a new feature for 2012 which is called Grub Hub and will feature some quick and easy (sometimes healthy) recipes written by yours truly.
Here is the first one:
Pitta Bread Pizza with Potato Wedges (serves 2)
A quick and easy healthy meal which you can easily adapt to add your favourite toppings.
Ingredients
3 large potatoes
1 tablespoon olive oil
1 teaspoon of dried mixed herbs
pinch of chilli powder
Salt and Pepper
2 pitta bread (wholemeal, white or herb)
2 tablespoons of BBQ ketchup or tomato ketchup
2 slice of wafer thin cold meat or cooked chicken (omit for vegetarian option)
slices of red onion (optional)
slices of tomato (optional)
3 heaped tablespoons of grated cheese
pinch of dried mixed herbs
Method
Pre-heat the oven to 180.
Cut the potatoes into wedges and place in a bowl, drizzle over the olive oil and add herbs and chilli powder. Mix until the potatoes are coated. Place on baking tray and season with salt and pepper. Cook for 40 minutes, turning half way through cooking time.
Place the pitta bread on a baking tray and spread a tablespoon of BBQ or tomato ketchup over the top, sprinkle half the cheese over the pitta breads. Add your chosen toppings then top with the rest of the cheese and sprinkle the dried herbs over the top. Cook for 10 minutes.
Serve and enjoy!
